Spencer Metcalfe joined us in June 1997 as a trainee chef, and last year became Head Chef. Along with his team of Charlotte Ewbank and John Nugent they offer superb, locally sourced traditional food, demonstrating a passion and a flair for food which comes across in the flavours produced.
